Santa Fe Style Baked Fish

This recipe works well with any firm white fish, such as scrod, tilapia, orange roughie, halibut or red snapper

2/3 lb. fish filets, skinned

12 green olives, rinsed and sliced

2 green onions, chopped

½ yellow pepper, chopped

2 sun-dried tomatoes, diced

2 T lemon juice

2 t cilantro

4 T Monterey Jack cheese

Preheat oven to 450º

Place fish in covered baking dish treated with vegetable oil spray

Place veggies around the fish.

Sprinkle the cilantro and lemon juice over fish and veggies

Cover and bake for 25 minutes

Sprinkle cheese over fish and bake uncovered for 3 to 4 minutes.

Serves 2.  Approx. 200 calories and 3 grams of fat per serving.
